Autumn Chopped Salad with Apple Cider Dressing

Serves: 4-6

Ingredients

 

Salad

     
  • 1 head romaine lettuce, chopped
  • ¼ cup candied pecans
  • 1 cup Granny Smith apples, diced
  • 1 cup fresh pears, diced
  • ½ cup dried berry blend
  • ½ cup bacon, cooked and chopped
  • 1 cup blue cheese crumbles
  • 1 bunch fresh basil, to garnish
  • 1 cup fresh raspberries, to garnish
  • 1 cup fresh blueberries, to garnish

Dressing

     
  • ¼ cup fresh lemon juice
  • ¼ cup apple cider vinegar
  • 1⁄3 cup honey
  • ¾ cup Laura Lynn olive oil

Directions

     
  1. Add all the dressing ingredients to a bowl and whisk together very well. Pour into a squirt bottle and set aside.
  2. Add the chopped lettuce to a large bowl.
  3. Add all the ingredients up to and including the dried berry blend, then toss together.
  4. Liberally drizzle the dressing on the salad.
  5. Top with bacon, blue cheese, fresh fruit, and basil leaves.
